Everyone probably wonders, how can I have something really tasty and also follow an Ayurvedic lifestyle. Well, the answer is not very difficult. Keeping a balanced diet, rich in vegetables, fruits and whole grains will guarantee you energy, peace of mind and everything you need to accomplish your daily goals. Oh and of course you can have all this in very tasty meals. Including herbs on your food is a very good idea too, so that’s why we brought to the table a special Coconut Curry Chicken as an option for you. Mise en place

In this Ayurvedic recipe everything starts with some garlic and onion. Make sure to dice them up really well. Depending on your taste and the serving you are preparing, chop more or less of garlic and onions. As soon as you have it done, set aside some curry powder, salt, paprika and black pepper. You will need it to season your chicken.

Now that you have all set, let’s dig into the chicken. Get all those herbs and pour it on top of chicken breasts. Remember to go easy on salt. Exaggerating on it can cause you many problems in the long term. A lot of heart, blood and digestions issues are caused by a salty diet over some years. Curry is also a very particular herb and has a strong taste, so make sure to add the right amount so it’s not over powering.

Let’s Grill it

In your stove, with a medium flame, place a skillet that you are going to use to make the magic happen. In order to grill the chicken and everything, feel free to use: 

  • Vegetable oil;
  • Coconut Oil;
  • Butter;
  • Ghee;

Well, when your skillet is already hot enough and your ghee is melting, put the onions and garlic on it. Wait till they get a gold color and then bring the chicken breasts.

Flip the chicken pieces every 3 minutes till they get well done with, again, a golden crust. If you are not sure if the chicken is ready, that’s fine. Pick the more robust piece and cut it in the middle to make sure it’s good. The logic here is: if the largest one is ready, so are the smaller ones. When the chicken is ready, you can pour some coconut milk and mix it all together. Some people like to add some tomato sauce, but it’s not a rule. Feel free to add it or not. Wait a little bit till everything gets hot and it’s ready. Let’s take care of the sides now.

Side of Basmati Rice

We suggest basmati rice but of course, feel free to go creative with your Ayurvedic recipe. Saute vegetables can taste really good here too, or maybe some pasta. Anyways, let’s stick with the rice for now. So part of the onions and the garlic that you chopped in the mise en place step, you will use right now. This time you will need not a skillet but a taller pan. 

Again, use a medium flame and put the ghee on it. When it starts to melt, place the onions and garlic. As soon as it looks gold, put the portion of rice you will cook. 

Mix it all a little bit without water. Then pour the water on the pan. The proportion is always 1 cup of rice = 2 cups of water. Add salt, mix it and cover the pan. As soon as the water starts boiling you can remove the lid and adjust to low flame. Now you just need to wait.

Wait till the water level goes to the very bottom of the pan. Then you can turn off the fire and wait for the rice to “dry” a little bit.
